Metre2 Mail - free, with Pro extras
Rules sort mail as it arrives: supplier invoices to Accounts, newsletters out of the way, anything from the boss flagged. Three rules are free, and the commonest one is a right-click away - "Always move email from this sender to...". Mail Pro has no limit.
Sheet 013 free rulesUnlimited with Pro
Right-click an email from the sender (or open More) and choose Always move email from this sender to...
Choose the folder. The rule is made, and Mail offers to move the emails from that sender already in the folder.

Move it to a folder, mark it read, flag it, archive it, delete it - and stop any more rules running on it.
Right-click a folder and choose Run rules on this folder to sort the email that's already in it - free.
