Metre2 Mail - free, with Pro extras
Metre2 Mail comes with a small AI model that runs on your PC. Summarise gives you the gist of a long conversation in a few bullets - free. With Mail Pro it drafts a reply from a few words, or translates an email. Nothing you read or write is sent anywhere.

Open any email. The AI button sits in the reading pane's toolbar, next to Forward.
Choose AI > Summarise. The summary streams into a card at the top of the conversation, labelled ON-DEVICE AI · NOTHING LEAVES THIS PC, with Copy.
Choose Draft a reply... and type what it should say if you like - "say yes, Monday works". Insert into reply puts it in the composer, ready to edit.
Choose Translate... and a language: English, French, German, Italian, Spanish or Polish. Names, numbers and dates are kept as they are.
It's a small model and it can get things wrong - check a draft as you would anyone else's. Cancel stops it at any time.
Help: On-device AI has every option in detail.
