Settings > Reading > Look: Match Windows, Light or Dark. Light is blueprint paper with ink-blue lines; dark is deep navy with cyan. Either way every email is shown on clean white paper.

Windows notifications for new mail come while Metre2 Mail is open (Settings > Reading). Turn them off for one account in Settings > Accounts > Edit.
Settings > Reading. It opens minimised, so new mail notifications arrive without you opening it. You can also turn it off in Windows Settings > Apps > Startup.
IMAP accounts get new mail the moment it arrives (push). Check for new mail every sets how often Mail also checks, from 1 to 60 minutes; F5 checks now.
Accounts (add, edit, import, signatures, Microsoft 365 mode), Reading (the look, pictures, links, notifications, undo send, starting with Windows, checking), Rules, Categories, Templates, Blocked senders, Mail Pro and About (the version, the open-source parts and the keyboard shortcuts).
No ads and no Metre2 account. Your mail goes straight between this PC and your email provider and is never copied to Metre2's servers. The only thing Metre2 hears about is anonymous usage counts, which you can turn off.
