What does the per-room packing progress board actually show?

One card per room that has at least one box logged. Each card shows the room's total box count plus a single completion bar - the proportion of that room's boxes already unpacked at the destination - and a fragile/essential item count badge. Rooms with the most boxes still packed surface first on the Rooms tab, since that's what needs attention.

What information is tracked per box?

A box number/label (free text - use whatever numbering makes sense to you), a room/destination (Kitchen, Living Room, Bedroom, Bathroom, Office, Garage, Garden or Other with a free-text detail), contents (free text, supports multiple items), a priority flag (Standard, Fragile, or Essential/open first), a packed date that defaults to today, an unpacked status you toggle once the box is opened at the new place, and optional notes.

Does this replace insurance or a professional moving company's inventory?

No. This is a record-keeping tool for tracking what's packed where during a move - it doesn't insure or protect the contents of your boxes, and isn't a substitute for proper insurance or a professional moving company's own inventory process for high-value items.
